Dominican Pollo al Horno (Baked Chicken)

Dominican Pollo al Horno is a beloved home-style dish found on dinner tables throughout the Dominican Republic. Known for its bold seasoning, juicy texture, and beautiful golden color, this baked chicken is often served with white rice, beans, tostones, or a fresh salad. Like many Dominican recipes, Pollo al Horno relies on a flavorful marinade called sofrito, which typically combines garlic, citrus juice, oregano, herbs, and spices to infuse the chicken with rich Caribbean flavors.

The dish reflects the diverse culinary influences that have shaped Dominican cuisine over centuries, including Spanish, African, and Indigenous Taíno traditions. While roasted chicken is popular around the world, the Dominican version stands out because of its unique combination of sour orange or lime juice, garlic, oregano, and colorful vegetables. Families often prepare Pollo al Horno for Sunday lunches, holidays, and special gatherings because it is economical, easy to make, and satisfying for a crowd.

This recipe serves 4 to 6 people and delivers tender, flavorful chicken with crispy skin and a delicious pan sauce.

Ingredients

For the Chicken

  • 3 to 4 pounds chicken pieces (legs, thighs, drumsticks, or a whole chicken cut into pieces)
  • 4 cloves garlic, minced
  • 2 tablespoons Dominican oregano (or regular oregano)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice or sour orange juice
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon ground cumin (optional)

Vegetables

  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 medium tomatoes, sliced

Optional Garnish

  • Fresh parsley or cilantro, chopped
  • Lime wedges

Instructions

Step 1: Prepare the Marinade

In a large bowl, combine the minced garlic, oregano, salt, black pepper, paprika, olive oil, lime juice, soy sauce, vinegar, and cumin. Mix well until all the ingredients are thoroughly incorporated. This marinade is what gives Dominican Pollo al Horno its signature flavor.

Step 2: Marinate the Chicken

Add the chicken pieces to the bowl and rub the marinade over every surface. Make sure the seasoning gets under the skin whenever possible. Cover the bowl and refrigerate for at least 2 hours. For the best flavor, marinate overnight.

Step 3: Arrange for Baking

Preheat the oven to 375°F (190°C). Lightly grease a large baking dish. Spread the sliced onions, peppers, and tomatoes across the bottom of the dish. Place the marinated chicken on top of the vegetables in a single layer.

Step 4: Bake the Chicken

Cover the baking dish loosely with aluminum foil and bake for 35 minutes. Remove the foil and continue baking for another 25 to 35 minutes, or until the chicken is fully cooked and the skin becomes golden brown. The internal temperature should reach 165°F (74°C).

For extra browning, place the chicken under the broiler for 2 to 3 minutes at the end of cooking. Watch carefully to prevent burning.

Step 5: Rest and Serve

Remove the dish from the oven and allow the chicken to rest for 5 to 10 minutes. Spoon some of the flavorful juices and cooked vegetables over the chicken before serving. Garnish with fresh parsley or cilantro and serve with lime wedges.
